OG = 1.038

FG = 1.006

IBU = 45

SRM – 40

ABV = 4.2%

Assumption 70% efficiency

 

INGREDIENTS

 

5 lbs English 2row pale malt

2.5 lbs flaked barley

1.0 lb roasted barley (500L)

12 AAU East Kent Goldings Hops (60 min)(2.4 oz /5% alpha acids)

Wyeast 1084 (Irish Ale) or

White Labs WLP004 (Irish Ale)

Ferment at 72 degrees

 

Steps

 

Heat 2.66 gallons of water to 161 degrees, stir in crushed grains and mash at 150 for 60 min.

 

After 60 min, raise temp to 168 and hold for 5 min. Recirculate wort until clear then sparge

 

with 170 degree water. Boil wort for 90 min adding hops at times indicated.. Ferment at 72 degrees. After 7 –10 days rack to secondary.

 

Ferment 7 days more or until final gravity is reached. Prime with .75 cup of corn sugar or

 

force carbonate.

 

This recipe will not give you the creamy signature head if bottled with corn sugar or forced carbonated with merely CO2.

To achieve the signature head, you must use a Nitrogen/CO2 blend—*requires a special gas tank*

The gas blend is around 75% Nitrogen - 25% CO2.

The beer will still be fine without the gas mixture, just don’t overcarbonate as the original is very close to flat right out of the bottle.
